One of my personal faves is adding a can of tuna and some peas and carrots (the frozen variety)... tastes a bit like tuna caserole. Another mac and cheese variation is a little bit of salsa, tomatos and chicken. Once I made that one and I put it in a caserole dish and took cornbread batter (the betty crocker 99c. kind) and spread it on top and baked it... pretty tasty.
